Italian Meatball Soup

Another great slow cooker recipe that is ideal for any leftover meatballs!

Serves: 4-5

Time: 8 hrs. 10 mins.

Ingredients: • 16oz Italian meatballs (thaw if frozen and ensure they are pre-cooked)

• 19oz can cannellini beans (drained)

• 14½oz can diced tomatoes (with basil, oregano and garlic – undrained – add the spices

by hand if you can’t find them included in the can)

• 1¾ cups beef broth

• 1 cup water

• 1/3 cup Parmesan cheese (shredded)

Directions:

1. Put cheese aside and place all the other ingredients in your slow cooker and mix well.

2. Cover and cook on a low heat for between 8 and 10 hours until everything is warm, and the meatballs have absorbed the flavor of the soup.

3. Serve in bowls garnished with the cheese.
